Les Roises is a 0.62-hectare monopole in Collin's home village of Congy in the northern Coteaux du Morin. The 65-year-old vines have full southern exposure and are planted on soft clay and silex topsoils over limestone. As for all Collin Champagnes, the fruit is hand-harvested, the clusters destemmed and the grapes gently pressed; the juice is fermented spontaneously and slowly (up to six months) with natural yeasts in mainly-used Burgundy barrels; reserve wines are held in foudres and tonneaux.

Descendant of a family of Champagne winegrowers and coopers since 1812, Olivier Collin took over the family estate in Congy in 2003, in the heart of the Coteaux du Petit Morin.
While still a student, Burgundy wines fascinated him! He chose to produce exclusively single-plot champagnes, single grape varieties, vinified and aged in wood, fermented with indigenous yeasts, without fining or filtration. The Ulysse Collin estate marked, from the first vintage of 2004, Olivier's original vision of marrying in Champagne the tradition of aging in wood and the modernity of single-plot champagnes.
From the beginnings of his career as an independent winemaker to this day, he has focused on highlighting the Coteaux du Petit Morin and Sézannais. Olivier is right: his wines reveal exceptional terroirs! Thanks to his work, his determination and his passionate nature, he has become a key figure in the production of great Champagne wines.
The extension of the aging on slats decided by Olivier in recent years has taken the already magnificent wines to a whole new dimension.
