Dominio del Águila Canta la Perdiz is a red wine made by the Dominio del Águila winery in the town of La Aguilera (Burgos), D.O. Ribera del Duero.
Dominio del Aguila is a winery created by Jorge Monzón and Isabel Rodero in 2010. Jorge started his oenology studies in Bordeaux and continued his professional career with emblematic wineries like Romanée-Conti and Vega Sicilia, until he arrived at the Arzuaga winery.
They cultivate 30 hectares of vineyard organically. The main variety is the Tempranillo grape with other local varieties such as Bobal, Grenache and Albillo, planted on clayey-sandy-rocky soils, depending on the plot.
The vineyard, which is over 85 years old, is also located in the municipality of La Aguilera, and is planted on sandy-calcareous soils at an altitude of 900 metres. The main variety in the vineyard is Tempranillo, but since it is an old vineyard, there are also some other minority varieties like Bobal and Albillo.
Dominio del Águila Canta la Perdiz is a wine made with Tempranillo grapes and other red and white varieties mixed together in one of the oldest vineyards in La Aguilera, with strains that are over 150 years old. This vineyard is located at 890 meters above sea level on soils that are sandy on the surface and limestone at depth.
The harvest is manual and all the varieties are picked together. Once the grapes have been foot trodden, the result is vinified in concrete tanks. When the fermentation has ended, the wine is aged for 30 months in French oak barrels.. They manage to achieve breathtaking elegance in their wines, focused on small volumes and high quality. Indeed, only around 1,500 bottles of the 2019 Canta La Perdiz were produced. This is sourced from a single vineyard parcel of mainly 100 year old, ungrafted vines. Despite the wine’s concentration and density, it still manages to portray great mineral lift and focus.
