Bright greenish wine. Intense wine with floreal aromas of broom and fruity aromas of green apple. The wine is slightly bubbly, and thus is very fresh, salty and mineral. The aftertaste is herbaceous and elegant.
Lively edition of the classic Testarossa line, the passerina is finding its best expression in Capestrano (AQ) . Mineral, herbaceous and fresh: this wine is extremely fine and elegant.
The vineyards extend in the area of Capestrano at 450 m.a.s.l., in the
core of Gran Sasso and Monti della Laga National Park.
This area is characterized by high temperature ranges between day and
night that preserve the acidity and enhance the synthesis of aromas.
The soil, which is sandy and pebbly, confer the wine with minerality and
saltiness.
The 5-generations long history of the Pasetti Winery starts in the Bourbon era and reaches the present day. The turning point for the winery came in the 60’, with the start of the vinification on its own: the result is extremely positive and the company manages to make a name for itself, registering a significant growth of customers and turnover.
In the 80’s, then, Mimmo Pasetti (who already began studying enology) gave the company the boost to dare bottling its Montepucliano: he did that to celebrate the birth of his firstborn Francesca, who was redhaired just like Mimmo’s grandmother Donna Rachele.
Thus was born the Testarossa (which literally meas “Red Head”), flagship of the Winery and the Pasetti Family, that since 5 generations carries on the viticoture work with the same passion and determination. Mimmo Pasetti, nowadays, manages the company and is a visionary entrepreneur: his project began at the dawn of the new millennium, when he started acquiring more and more fields in Pescosansonesco (Gran Sasso and Monti della Laga National Park).
The terroir of Pescosansonesco, clay-calcareous and rich in skeleton, is perfect for the Montepulciano d’Abruzzo cultivation; moreover, the important temperature range between day and night of this 550 m.a.s.l. place ensures that the win will have a sensory profile of high quality and elegance. Thus began the transformation process from the coastal part of Abruzzo to the mountain area, which will continue with the acquisistion of Capestrano, Castiglione a Casauria and Ofena: in such way, Pasetti Winery is the only company in Italy allowed to exhibit the National Park logo in the back of its bottles.
Today Mimmo manages the company along with his 3 sons, everyone with a defined and different role: Francesca Rachele is in charge of the administration, Massimo of the export and international visibility and Davide, who’s an oenologist, is in charge of the wine production.
Pairing Suggestions: It is recommended with fish dishes, cold cuts, white lasagna, risotto, courtyard animals, seasoned cheeses, white meat ragù.
Maturation: Ageing: 6 months on its fine lees in steel tanks, then 10 months in the bottle. It can be appreciated after 5 years.
