Pairing Suggestions: The wine is well paired with hearty meals showing bold flavours. Red meats, intense sauces and complex dishes.
Maturation: The wines were then individually placed in a combination of French oak, around 70% new French oak for 18 months. We then did a special selection blend of Cabernet Sauvignon and Cabernet Franc, which was then placed into 100% new French oak for a further 5 months, to help develop the characters we were looking for in the blend.
