A brilliant pale lemon yellow. Nose: A markedly savoury scent of steely minerality complemented by an elegant floral perfume of white blossom and pear. Palate: Unusually complex for Ribolla it is elegant and cleansing fresh notes; long finish of saline mineral notes. The Ribolla Gialla is a very old locally developed wine, recognized since 1300 is one of the best wines of Friui, especially if produced at Rosazzo, it has always been the estate’s Standard Bearer. Perusini Ribolla, is in fact, the result of a long labour in clonal selection which has raised beyond measure the characteristic of this wine.
In accordance with our credo that a great wine is born on the vine, Perusini wine is produced only from the grapes of its own vineyard, all terraced on loam rock (known as Ponca in Friuli) in a splendid position, the vines closely planted in accordance with strict criteria. The in-depth research into native vines that has become a byword for our vineyard over three generations.
The Perusini vineyards are one of the 50 happy few listed by Luigi Veronelli in “I vignaioli storici” (The Italian Wine-growers Bible). Today the estate is run by Giampaolo’s daughter, Teresa, an art historian like her uncle, but also a keen cultivator who divides her time between her studies and running the estate together with her husband Giacomo de Pace and her three sons.
Pairing Suggestions: Perfect with seafood appetizers, ideal with fresh fish dishes, oysters, white meats, risotto, soups, cheeses etc.
Maturation: The vinification took place in modern stainless steel tanks with the temperature of the fermentation controlled below 20° C. For the following 6 months the wine was left in contact with the fine lees. The wine has not gone through malolactic fermentantion.
