Bright straw yellow. Nose: it opens with mineral sensations accompanied by a distinctive white pepper note and jasmine aroma. Palate: taut and dynamic, the finish is long and delicately salty.    

NESTLING ON THE NORTHERN SIDE OF MONTE CASTELLARO, THIS SMALL VINEYARD ENJOYS A BREATHTAKING VIEW OF THE LESSINI MOUNTAINS, WHICH PROVIDE IT WITH ENVIABLE COOLNESS. HERE, THE SOIL IS EXTREMELY STONY AND THE FEARLESS ROOTS DIG THEIR WAY DOWN THROUGH A MAZE OF BASALT.       VINEYARD

The vineyard consists of a small plot of less than one hectare, facing north on the slope of the ridge rising from Monte Castellaro towards the hamlet of Fittà.
It is located at an elevation of 220 m above sea level, with 20% slopes. The volcanic soil consists of altered basalt vulcanite, moderately deep and with a profile rich in rock fragments.
The Garganega vines are Pergola Veronese trained and, on average, 50 years old.

Fittà, Castellaro and Tremenalto are among them: they are places whose unique features of soil composition and microclimate have made them historically acknowledged in the Soave Classico region as being highly-suitable for vinegrowing, so much so as to be officially recognized and included in the production regulations as “UGA” (Additional Geographical Units).

In fact, we have always obtained very expressive grapes from our three small plots located at the heart of each of these places, which we decided to vinify separately, but in the same way. The result is three original and perfectly distinct wines.

So, what defines their uniqueness?
This is the question that led to the “I Luoghi” (The Places) project: a study that began with our observations in the winemaking field and took us to the depths of the territory, through a study of its geology, to discover the richness and variety of our volcanic soils.

The castle is the one in Soave: a heritage from the Middle Ages, when the town was still called by the old name of Suavia; Giovanni and Rosetta’s daughters, however, have been the main female characters in this story since the start of the twenty-first century. Our family has been living and cultivating the land since the nineteenth century in Fittà: a small rural village mounted like a precious stone on the hills of Soave Classico.

The history of Suavia however began later, in 1982, when Giovanni and Rosetta (the father and mother), aware of the great potential of their area, decided to set up on their own and make their mark, crushing their grapes and making their own wine.
Today we three sisters, Meri, Valentina and Alessandra, carry on the family tradition and run the winery always working here in Fittà, where it all started.

Being aware of this, we can claim that our vineyard management is not a short-sighted one limited to the wellbeing of the vines alone, but it safeguards the landscape in its entirety.
The work carried out by man plays a very important role in the management of both the vineyard and the natural surrounding landscape, which is made up of elements that must be considered individually and duly taken care of in order to preserve the harmony created by their unity, i.e. that of nature itself.

Maturation: Ageing: for 12 months in contact with the fine lees in steel vats. Filtration: only one membrane filtration before bottling. Maturation: 24 months in bottle.
