The colour is garnet red with ruby hues. The aroma is intense, persistent, with clear scents of fruit, dog rose and spices. The taste is full-bodied but at the same time harmonious and balanced, with graceful, never-too-prominent tannins.
The grapes used in the production of this wine come from vineyards located on nicely sloped hills, that are characterized by soil composed mainly of clay and limestone, moderate in structure, and covered with quartz sand and fine silt. These elements give the wine many mineral nutrients and a remarkable bouquet.
Before that, the wine made from the nebbiolo grape variety offered a completely different taste experience: it was a sweet, sparkling wine. As a matter of fact, in 1787 Thomas Jefferson, who was later to become President of the United States, tried nebbiolo while he was staying at Hôtel d’Angleterre in Turin. In his travel journal, he described it with these words:Before that, the wine made from the nebbiolo grape variety offered a completely different taste experience: it was a sweet, sparkling wine. It was only later, thanks to an intuition of Marchesa Giulia di Barolo, that the wine took its full-bodied, stable and noble character. She decided to build new cellars to make wine in large casks, a place that was protected from the cold temperatures of late autumn.
Still today, in five of these centuries-old oak casks, thanks to constant and careful maintenance, Barolo renews its history every year.
Pairing Suggestions: It is ideal for sipping alongside hearty first courses, pastas with meat sauces, agnolotti, red meats, roasts and stews, hard medium ripened cheeses.
Maturation: This wine ages for at least 9 months in oak barrels of different capacities, chosen each year to better express the intrinsic characteristics of the grapes and the particular characteristics of the vintage. The wine completes its ageing in bottle before being released on the market.
