The brut Perusini, is produced from grapes ribolla (mainly) and chardonnay with a”long” charmat method (three months in an autoclave). The ribolla for its fresh varietal is a superb base for sparkling wine, to which the chardonnay adds body and aroma. The grapes from the hills, with the usual low yields and careful processing are the secret of this simple and very fruity sparkling wine.
In accordance with our credo that a great wine is born on the vine, Perusini wine is produced only from the grapes of its own vineyard, all terraced on loam rock (known as ponca in Friuli) in a splendid position, the vines closely planted in accordance with strict criteria. The in-depth research into native vines that has become a byword for our vineyard over three generations.
The Perusini vineyards are one of the 50 happy few listed by Luigi Veronelli in “I vignaioli storici” (The Italian Wine-growers Bible). Today the estate is run by Giampaolo’s daughter, Teresa, an art historian like her uncle, but also a keen cultivator who divides her time between her studies and running the estate together with her husband Giacomo de Pace and her three sons.
Pairing Suggestions: It is the new alternative aperitif drink to go with finger food. It is ideal with entrees and pasta and rice dishes. Exceptional with shellfish and steam baked fish dishes.
Maturation: Early harvest in order to obtain a base for the spumante with good acidity and not too high alcoholic content (11 %Vol). Soft pressing, refrigeration and static decantation of the suspended parts, decanting of clean must, fermentation at controlled temperature (about 16°C) adding selected yeasts that increase the development of characteristic perfumes and fragrances. Then the wine go through a „spumantizzazione“ with a „long“ Charmat method. After that the wine rest for 5 month on his yeasts for refining.
