2023 has an attractive, light-yellow colour in the glass, with aromatic, floral notes of honeysuckle and acacia, as well as citrus and spice. As the aromas unfurl, honey, brioche, orange blossom and mineral notes reveal themselves… it’s tempting to drink it up promptly, given it’s so delicious, but savouring it over an evening will bring even more pleasure. It’s fairly full-bodied but the lick of natural acidity and freshness mean excellent balance and a fine, elegant feel.

The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century, Monaldeschi della Cervara. A blend of Chardonnay grapes and a small quantity of Grechetto make a wine that can age over time and represent the elegance and complexity of this unique estate.
Cervaro della Sala is one of the first Italian white wines to have malolactic fermentation and aging take place in barriques. The first vintage of Cervaro to be produced was the 1985 vintage.
The Antinori family has been committed to the art of winemaking for over six centuries since 1385 when Giovanni di Piero Antinori became a member, of the “Arte Fiorentina dei Vinattieri”, the Florentine Winemakers’ Guild.
All throughout its history, twenty-six generations long, the Antinori family has managed the business directly making innovative and sometimes bold decisions while upholding the utmost respect for traditions and the environment.
