The colour is ruby, veering towards garnet red. The aroma is intense, with clear scents of rose, liquorice, spices and aromatic herbs, especially wild mint. Full and elegant taste with good body. This, together with the delicate colour and the structure, creates a Barolo of immediate pleasantness, balance and harmony.

Coste di Rose is a prestigious hill, fully exposed to the east, in the municipality of Barolo. The remarkable slope – more than 40% – favours the perfect ripening of the nebbiolo grapes, which are particularly demanding as regards light exposure and temperatures. The hill is situated in the geologic area dating back to the Serravallian age, but curiously the soil has a moderate limestone content, while it is particularly rich in quartz sand and very fine silt: so much so that fossil shells have been found during the normal cultivation activities. These peculiar characteristics give nebbiolo intense and refined scents, reminiscent of wild mint.
Pairing Suggestions: It is ideal for raw meat, flan with vegetables, eggs with truffle. Excellent with tajarin, roasts, sheep and goat toma cheeses and hard medium-ripened cheeses.
Maturation: After racking, the wine begins a period of clarification and rest in vitrified concrete tanks, before continuing maturation in wood. The evolution lasts abouttwoyears.Duringthe firstyearthewinematuresinsmall French oak barrels, with the aim of fixing the color and increasing the aging potential; the percentage of new woods is perfectly balanced to maintain the identifying characteristics of this Cru unchanged. The second year the wine ages in large Slavonian oak barrels in which the characteristics of finesse and elegance are enhanced. The complete expression of the wine is obtained after a period of atleast1 year of rest in the bottle.
