The 2022 Ronco del Gelso Sauvignon "Sottomonte" is a complex wine made from the challenging Sauvignon grape variety, known for producing satisfying results in skilled hands. The vineyards are located in Cormons, where deeper, siltier soils effectively retain moisture. This wine is soft, full, and balanced, showcasing the grape's delicate aromatic notes despite its high acidity and alcohol content. Aged on the lees in 2,500-litre oval barrels, it is bottled in the autumn following the harvest. The wine exhibits a linear yet Mediterranean character, maintaining a harmonious balance and elegance. Our vineyards, situated on a small plain by the Isonzo tributaries, benefit from poor, stony, dry soils ideal for high-quality viticulture. We employ vineyard strategies that respect the soil's distinctive nature, limiting vine vigor and production. Each vine is single-Guyot pruned and vertically trellised with high density to encourage root competition. Careful selection of clones and rootstocks is made during planting, and green cover is planted in alternating rows. Average yields are around 1–1.5 kg per vine, contributing to the wine's exceptional quality.
